4. The Flow:

This isn't a technique. It's a mindset. The best baristas have a flow. They move smoothly from the espresso machine to the grinder to the refrigerator to the counter. They're not rushed, but they're not wasting time either. They're efficient.
Efficiency is the secret to profit. If you can serve two more drinks per hour because you're flowing smoothly, that's $10 more per hour, $100 more per day, $36,500 more per year. That's significant.
So train your baristas to move efficiently. No wasted steps. No unnecessary movements. Every motion has a purpose. And if you see them standing around, give them something to do. Wipe the counter. Restock the cups. Clean the steam wand. Idle hands are the enemy of profit.
